Beautiful presentation and healthy, too

 2 pounds melon meat, preferably yellow or green in color, sucn as canary or honeydew (a 4-pound melon yields bout 3 pounds usable fruit
 1 tsp. frozen apple juice concerntrae
 1/4 tsp. ground cinnamon
 1/8 tsp. ground cloves
 2 tsp. lemon juice
 3 tablespoons minced fresh mint
 2 cups berries (strawberries, rasberries, or blueberries)
 2 tsp. lemon juice
 1/3 cup low-fat yogurt
 fresh mint leaves for garnish

Puree the first 6 ingredients, then chill.

Puree the berries, lemon juice, and yogurt, and chill also.

Just prior to serving, pour the melon mixture into soup bowls, filling them no more than 2/3 of the way.

Pour the berry puree into the center of the soup bowls.

Create a swirling pattern by mixing the two purees using one circular motion with a spoon.

Garnish with fresh mint leaves.
