3 - 4 cups (about 720 ml) assorted berries (blackberries, blueberries, strawberries and/or raspberries) or other fresh fruit
 1-2 tablespoons (15-25 grams) granulated white sugar, or to taste
 1/2 cup (4 ounces)(115 grams) mascarpone cheese (can use cream cheese)
 1/2 cup (120 ml) cold heavy whipping cream (cream with a 35-40% butterfat content)
 3 tablespoons (25 grams) confectioners' (icing or powdered) sugar, or to taste
 1/2 teaspoon pure vanilla extract

Place all the berries (cut strawberries into bite sized pieces) in a large bowl and sprinkle with 1-2 Tbsp. sugar. Stir to combine and leave to macerate for about 15-30 minutes.

In bowl of your electric mixer (or with a hand mixer or wire whisk) beat the mascarpone, heavy whipping cream, confectioners' sugar (or to taste), and vanilla extract just until soft peaks form.

Take four wine or parfait glasses and layer the berries with the cream. Garnish with a sprig of fresh mint, if desired. If not serving immediately, they can be covered and stored in the refrigerator for several hours.
