Raspberry Cobbler

1 cup sugar

3 Tbsp. cornstarch

1 cup water

1/2 tsp. vanilla

4 cups fresh or frozen raspberries


1 cup flour

3/4 cup sugar

1/4 cup margarine (or butter)

1 beaten egg


1Mix sugar, cornstarch, water, and vanilla.

2Cook over medium heat until thick.

3Add berries and pour into baking dish.

4For topping, mix flour, sugar, and margarine as if making pie dough.

5Add egg. Mixture should appear crumbly.

6Sprinkle over fruit mixture.

7Bake at 400 degrees for about 40-45 minutes or until topping is lightly browned.
