Mothers’ Day Blackberry Cobbler

Make this for your Mom or a special woman in your life


2-3 Tbsp. unsalted butter

3 pints (6 cups) fresh berries, rinsed and drained, or a combination of berries and fruit

2/3 cup sugar

1 cup all-purpose flour

1 tsp. baking powder

1/3 cup milk

Vanilla ice cream or sweetened whipped cream


1Preheat the oven to 375 degrees F.

2Put the butter in an 8-inch square glass baking pan and melt it in the oven, being careful not to let the butter burn.

3Remove from the oven and let cool.

4If the fruit is tart, toss it with 1-2 tablespoons of the sugar.

5Add the fruit to the baking pan and spread it out evenly to fill it no more than two-thirds full.

6Stir together the flour, remaining sugar, and the baking powder.

7Pour in the milk and stir until just blended.

8Do not overmix.

9Spoon the batter over the fruit. Do not mix it in.

10Bake for 35-40 minutes or until the crust is golden brown.

11Serve warm or with vanilla ice cream or sweetened whipped cream.
