Blackberry or Black Raspberry Sauce for Duck or Venison

Great finish for your game dinner


1 pint blackberries or black raspberries

3/4 cup granulated sugar

4 cloves garlic, smashed and peeled

1/4 cup duck broth or pan juices from duck or other poultry

1/4 cup raspberry vinegar

1 tsp. freshly ground black pepper

1 tsp. fresh lemon juice


1Combine berries, sugar, and garlic in a 4-cup glass measure.

2Cover tightly with microwave plastic wrap.

3Cook at 100% for 4 minutes. Remove from oven and uncover carefully.

4Remove garlic from berry mixture and set aside.

5Place mixture in a blender or food processor and puree.

6Strain mixture through a fine sieve. There should be about 1 ½ cups.

7Return mixture to 4-cup measure.

8Add broth, vinegar, and reserved garlic.

9Cover tightly with microwave plastic wrap.

10Cook at 100% for 5 minutes.

11Remove from oven.

12Add pepper and lemon juice.

13Taste and correct seasoning , if necessary.
