Blackberry Muffins

2 eggs

3/4 cup sugar

1/2 cup vegetable oil

2 cups flour

1/2 tsp. salt

1/2 tsp. baking soda

1 cup vanilla yogurt

2 cups blackberries


1Preheat oven to 400 degrees

2Beat eggs, gradually adding sugar

3Continue beating and add oil

4In a separate bowl, mix flour, salt, & baking soda

5Stir dry ingredients into egg mix, gradually adding vanilla yogurt

6Gently fold in blackberries

7Scoop batter into greased muffin tin

8Bake for 25 minutes
