1In a large pot, place berries and gently mash with wooden spoon.
2Warm over low heat 15 minutes to extract juices.
3Add ginger and orange juice and gently warm over low heat.
4Bring mixture to a boil and add sugar one-half cup at a time stirring constantly. Add orange zest.
5Allow mixture to boil 10-20 min. until it reaches 220 degrees F on a candy thermometer or passes the jelly test.
6Remove from heat.
7Ladle into hot sterilized jars and process according to manufacturer’s directions.
