BLACKBERRY OR BLACK RASPBERRY SAUCE FOR DUCK OR VENISON

Type of Recipe: Sauces, Vinegars, and Dips

Difficulty: Easy

List of Ingredients:
1 pint blackberries or black raspberries
3/4 cup granulated sugar
4 cloves garlic, smashed and peeled
1/4 cup duck broth or pan juices from duck or other poultry
1/4 cup raspberry vinegar
1 tsp. freshly ground black pepper
1 tsp. fresh lemon juice

Directions:
Combine berries, sugar, and garlic in a 4-cup glass measure. Cover tightly with microwave plastic wrap. Cook at 100% for 4 minutes. Remove from oven and uncover carefully. Remove garlic from berry mixture and set aside. Place mixture in a blender or food processor and puree. Strain mixture through a fine sieve. There should be about 1 ½ cups. Return mixture to 4-cup measure. Add broth, vinegar, and reserved garlic. Cover tightly with microwave plastic wrap. Cook at 100% for 5 minutes. Remove from oven. Add pepper and lemon juice. Taste and correct seasoning , if necessary.
